Cranberry Chicken Salad
1 pound boneless skinless chicken breasts
1/2 cup dried cranberries, more if desired
1/2 cup slivered almonds, more if desired
1 cup mayonnaise, more as needed
2 tsp Herbs de Provence
salt & fresh ground pepper

Instructions

Book chicken in electric pressure cooker for 7 minutes with about an inch of water under the cooking rack. Cool and shred.

Mix together shredded chicken, cranberries, almonds, & mayonnaise. Add herbs, salt and fresh ground pepper to taste.
