Forrest makes the best crab cakes that I’ve ever had. He swears that I only say that so he’ll make them frequently, but I honestly believe it!
Forrest’s Crab Cakes
In a bowl, combine the following:
1 lb jumbo lump crab meat
1 tbsp melted butter
4 tbsp coconut milk, reduced and chilled
2 tbsp plain yogurt
2 tbsp lemon juice
1/2 tsp Old Bay seasoning
1/4 tsp salt
1/4 tsp pepper
zest of 1 lime
8 tbsp panko whole wheat bread crumbs
Shape and pat into patties. Broil until golden brown.
