We’ve had more snowfall in VA Beach today, so I decided to finally try to recreate my favorite soup recipe.
Similar to Panera’s Tomato Soup
4 cups chicken stock or low-salt chicken broth
3 oz. tomato paste
1 28oz cans peeled plum tomatoes, drained and crushed
1/4 cup freshly grated Parmesan cheese
Parmesan Reggiano rind
1/4 cup thinly sliced fresh basil leaves
In a medium saucepan combine chicken stock, crushed tomatoes, cheeses and cheese rind. Simmer soup uncovered 30 minutes, stirring occasionally. Season to taste with salt and pepper. Puree in blender or food processor. Add basil leaves and pulse a bit more to blend.
