I’ve made this chili twice, both times thinking Forrest would love it. Turns out… he hates it. Like, refuses to eat it hates it. It’s very sweet, and not at all chili like. So, I clearly won’t be making this a third time!
Coffee Black Bean Chili
Adapted from How to Cook Everything Vegetarian
1 can diced tomatoes
2 cups brewed coffee
1/4 tsp cumin
1/4 tsp allspice
1/4 cup turbinado or brown sugar
One 3-inch cinnamon stick or 1 tbsp cinnamon
1 cup dried black beans, washed and picked over
Salt and freshly ground black pepper
For simplicity sake, I combined all ingredients in my electric pressure cooker, set the pressure on high for 45 minutes. The beans were a little firm, next time I’ll do 60 minutes.
Serve over rice.
